Pomegranate Guacamole

I have a love-hate relationship with guacamole. Almost every time I eat it, it's either too salty or not salty enough, too tangy or not tangy enough, and so on. I decided that I would make my own and put my own spin on it. Anyone who knows me well, knows that pomegranates are one of my favorite fruits With guacamole being one of my favorite snacks, adding my own twist was a must.

  • 2 avocados
  • 1/3 cup diced red onion
  • 1 half diced Roma tomato
  • 1 teaspoon roasted garlic
  • 2 teaspoons of cilantro (I used stir in cilantro paste)
  • 1 lime
  • 1/3 cup of pomegranate seeds
  • 1 small jalapeno (optional)
  • 1 teaspoon each of salt, pepper, and ground cumin (or to taste)

Now I'm a fan of chunky guacamole so I scooped out one avocado and then I diced the other one to give it a nice 50/50 consistency. After this I added in all of my ingredients and used a spoon to toss them to get the flavor going before I started lightly mashing them all together with a fork. Of course if you prefer your guacamole super chunky, I recommend just dicing both avocados. If you like your guacamole very creamy, scoop out both avocados and make sure they're semi-smashed before you add your other ingredients. 

When you're mixing it all together, you'll notice such a beautiful colorful mixture. About half way though mixing it, you can taste it a bit to see if it's to your liking. I ended up adding a tad bit more salt and some more diced jalapenos to add a little kick to it. Once it's just how you like it, serve slightly chilled with chips and garnish with just a few pomegranate seeds on top.

This is a great festive snack for the fall and winter. It has a lot of color and I would definitely serve this at a Christmas party (green and red snack anyone?). If you try it, let me know in the comments below.
