Sweet + Savory Popcorn Trail Mix
I'm super excited about the Eats section here on ToniBaldwin.com because I LOVE food! I'm not the type of person who eats healthy 24/7 at all. I definitely believe in eating whatever you want in moderation. For today, I wanted to show you a quick snack that I make on days when I want something sweet and salty. The perfect combination for me? Popcorn trail mix! It's the perfect summer snack and it's a great on-the-go snack for anyone in a hurry.
To make this you'll need:
- 1 1/2 cups of organic popcorn (white cheddar or lightly salted, your choice)
- 1/4 cup of salted roasted almonds
- 1/4 cup of granola (I used vanilla granola)
- 6 large cherries or a 1/2 cup of dried cherries
For a base I put in a few almonds and a tiny bit of granola and then added 1 cup of popcorn. Then I put the rest of the almonds and granola on top of the popcorn in my bowl. I added the last 1/2 cup of popcorn and then I tossed it with my fingers to get a good mix. Once it was mixed to my liking, I added 6 large cherries on top.
My favorite things about this recipe is that it's a healthier alternative. I know there are going to be a few people who may disagree, but this snack is definitely healthier than buttered popcorn or candied cherries. If you'd like to make it a bit healthier and a little more like trail mix, you can use unsalted popcorn and dried cherries.
